There’s really no analytics in Google Classroom that will tell you if a student has an assignment open.

Teachers can see at a glance how many users have completed their assignments on the Work & Assignment page, and viewing each assignment provides a more detailed user status. Students can also view pending assignments and completed or graded assignments.

If it’s in Google Classroom, the teacher can see it. In my case, my settings are such that if the student hasn’t “turned in” the assignment, I’m not notified that they’re even there.
