According to the official definition, haki weapons are invisible armor made from will power, but… why wasn’t there a black haki before the timeskip?
Why is Armament Haki invisible?
In the fight between Zoro and Monet, the girls couldn’t distinguish a slash with or without a haki, which would then suggest that he’s invisible. Although when Tashigi cut Monet the sword was still not colored black and Monet was cut anyway, Haki had to be used.

Each haki cover is black. The aura is what varies ie: Luffy Red, Zoro Purple ect. Vergo was quite a special case (last photo listed) because his haki weapons were so advanced without being ryo that he had a tint but was still black. Each haki cover is black.
Why is Luffy’s haki weapon red?
Haki’s red hue comes from using his Devil Fruit to give Haki gummy properties. Because of the constant blood flow in his body, because of the extreme pressure in his blood, his skin turns red and so does his haki.
